Braised Australia Abalone in Soy Sauce

We select fresh and alive abalone from Australia (about 600g each one). Braise abalones for more than 12 hours continuously with dozens of secret ingredients, the meat of abalones will be mellow and full, fragrant and tastes fresh and tender and smooth. Nutrients in the abalone will be fully retained. It is really a super good gourmet.

Crab Meat and Orange Soup

This is a royal court dish in the Southern Song Dynasty. According to records of Stories of Swordsmen, the eighth dish of the fourteen dishes in the banquet given by emperor when the queen was to go home for a visit was the very “crab meat and orange soup”. But the restaurant has made a new innovation of the dish. Cut an orange open, remove the orange cover, take out orange flesh and put in crab meat, and instill a little lemon juice. Vinegar will not be added as it will remove taste of crab. Though innovation, the dish now tastes less greasy than fried crab meat. Wrap the orange with an aluminum foil and put chrysanthemum and yellow wine at the bottom of the orange, and then put it in a steamer. With sweet fragrance inside and outside, the dish is extremely fresh. This new innovation endows the dish with infinite creativity.

Sautéed Sliced Abalone with Bean Curd

In a heatable pottery cup, there is crab meat and bean curd and several pieces of abalone. Having been soaked in water, the abalone is very chewy but not tough. The dish integrates color, fragrance, taste and form; the utensil is also beautiful. Bean curd is a nourishing food that clears heat, tonifies middle-jiao and qi, moisturizing dryness, increases the body fluid, and cleans intestines and stomach. And abalone is rich in protein, calcium, iron, iodine and Vitamin A. Cubilose and Crab Claws

This delicacy is a combination of fine white cubilose and crab claws. The fine white cubilose is conventionally sweet taste, while this innovative dish offered by the restaurant, which breaks the convention, is salty taste. Soak cubilose in water and stew it in chicken soup, and then put five complete crab claws on it. The dish looks like fingered citrons that support a piece of sky. Taking a spoon of it, you will be amazed by the extremely good taste. With respect to the features of the dish, cubilose is neutral in nature and tastes sweet; it nourishes yin and moisturizes dryness, tonifies middle-jiao and qi, strengthens the kidney and spleen, helps to produce sperm and raises blood; while crab meat is cold in nature and salty; it is able to clear heat and dissipate blood stasis, close up tendon and bones, dredge channels, expel heat toxin, nourish the liver-yin, and tonify bone marrow. The combination of cubilose with crab realizes supplementation of nutrients. People who love crab meat are invariably full of praises for it. It has become a must of crab banquet.

Crab Meat and Pork Balls

According to traditional technique, we select top pork, determine the proportion of lean and fatty meat based on seasons, cut meat into pieces and mix it with hand, and then add salt and fresh crab meat. Each meatball will be subject to 18 times of strike before being put into soup and stewed for 8 hours therein. The crab meat and pork balls taste rich, mellow and full.

Plain Sautéed Crab Meat

This is a signature dish of the hotel which is cooked by consummate skills. Crab meat and crab cream will be stripped out carefully and then pieced into the shape of crab. Fresh Sea Cucumber Soup

Sea cucumber is considered as a prime dietary supplement because it is high in protein, low in fat and sugar as well as no cholesterol. For this dish we use fresh sea cucumbers produced from Bangchui Island, Dalian where the seawater is of good quality and constant temperature throughout the year. Each sea cucumber is about 250g and when preparing the soup we only add a hint of salt to preserve its original flavor.

Fish Maw in Abalone Sauce

Like bird’s nest and shark fins, fish maw is one of the eight delicacies. It is rich in collagen and can help reduce the tiredness from the busy life. We add abalone sauce when preparing this dish to make it bolder in flavor and brighter in color.
